If you only use two RCA plugs then you will not have surround sound. It will be stereo. HDMI carries not just video but audio too. So if you can hook the HDMI into your system. If you can't, then hook the HDMI into your TV and connect the Blu-ray player and the sound system with an optical/digital cable.

Yes, but you may not get the surround sound. Blu-ray players can deliver all of the audio & video via an HDMI cable. That's the upside to it. The fewer cables the better. HDMI cables can be bought really cheap. I'm attaching a link to you. You didn't say what you will be plugging the HDMI cable into. Your receiver or TV? If you have the newer receivers that can decode the Dolby True HD, that's great! But if not, use the digital coax or optical connection if you can. HDMI cables carry a digital signal no matter how cheap or expensive a cable is. Digital signals can't degrade enough to notice for very short distances between devices.

You definitely can.
HDMI audio is always provided in parallel with both analog stereo and s/pdif digital. This is needed to support old equipment with DVI only input.
